Consuelo Poblete is a gastronomic designer and self-taught cook in charge of the snacks at Trillas y Faenas Campesinas since the age of 13. She is dedicated to bringing local producers and their agri-food heritage on the forefront everyday. Democratizing delicious, regional and seasonal food, Consuelo views the acts of eating and drinking as political, capable of transforming and strengthening territories, restoring social fabrics and rediscovering identities.
